We have been serving Hama Hama Oysters at three TEN main since the Restaurant's birthday, almost to the exclusion of all other Northwest oysters. They are consistently excellent. Popular Southern Puget Sound varietals, such as Little Skookums or Kumamotos are delicious but a little sweet for my taste and a bit soft on the palette. I love the firm bite, perfect brininess, watermelon rind and seaweed salad flavor of our beloved Hamas. I enjoy other Hood Canal specimens also- Quilcenes and Dabob Bays to mention only a couple others- but the Hamas Hamas are of SUCH DAMN CONSISTENT quality.
