This last class focused on Northern Italian style pasta. Above I am making sfoglia (Sfo-Leah) with my KitchenAid pasta roller attachment. When I learned how to make this version at La Vecchia Scuola Bolognese in Bologna we use a meter long wood rolling pin. I asked my instructor Stefania if I could use my machine when I got back home. She said if I did she would hunt me down and kill me. I think we get a very delicious approximation at The Main with my faster method. Don't tell Stefania!
